During the late 1930's and early 1940's, Foynes was the first International Airport in Ireland, and the fulcrum point for air traffic between the United States and Europe. The Famous Flying Boats were frequent visitors, carrying a diverse range of people, from celebrities to refugees. In 1942 Airport Chef, Joe Sheridan, was serving coffee to some damp miserable passengers. He thought that a little drop of something stronger might warm them up so he added a drop of Irish Whiskey to their coffee. A surprised American passenger asked "is this Brazilian coffee?", "No" Joe said, "That's Irish Coffee".
